How is EV training done?

I think I get it, but not fully. Is it when you battle the same pokemon over and over and you start to do more damage?

You've... kind of got the right idea. Kind of. Not really. EV Training is a process where you fight only certain Pokémon and it results in an increase in a certain stat. It's kind of complicated... it would probably be helpful if you read a couple of guides first and then asked questions...

You have 510 EVs to do whatever with,
252 can go into a single stat, so you can max out two stats
4 EVs for a single stat make one stat point
So if you max a stat with EVs you get 63 extra stat points for that stat.
