I tried speed EV training a pidgey in FireRed against Ratatas and Pidgeys. At one time, I expected to get 5 speed stats (killed 20 different ratata/pidgey), but only got 2 when it leveled up (at like lvl 12 or something? somewhere around there)

How exactly do EVs work?

Ev's work over time, unless it's like at Lv. 99.

Ah, thanks. So i'll see much more improvement as I keep on leveling it? Even if I stop speed training it?

You were expecting to get 5 speed stats, but that's how much higher it will be at lv100 I believe.

If you expect 5 additional speed stats for lv100, then you'll get about 2 additional speed stats around lv40. You gain the other 3 gradually through the next 60 levels.

That's probably not completely accurate, but it gives the idea.
