Probably one of the greatest genres ever, imo. Over the years I think I've played quite a lot of them, but they are always fun and never tire me out! And even better playing with friends. :)
Some of my most favorite are Double Dragon (II was the best), TMNT, Battletoads, and D&D. I also loved Captain Commando, Simpsons, and others.

I can't possibly begin to count the amount of times I've beaten SoR2. >_>
I'm not sure Dungeons and Dragons counts as a "Beat-em-up" since it is an RPG game...and features battle sequences, not real-time punching, kicking, bashing, slashing, etc.

I'm talking about the side-scrolling arcade games. Like Shadow over Mystara.
ah, okay. I understand now. Yeah, that one counts.
Definitely Battletoads that game is so much fun but so hard and it has the best theme song ever.
Streets of Rage for me.
I had so much fun playing SoR2 with my cousin.
We'd play it every time he came over.

Some Captain America game for SNES. I sold it years ago and now I regret it.

but yeah final fight is the best beatem up ever, SoR is pretty good, thank you for including TMNT. also, there's an alien vs. predator beatem up that is pretty good as well.

The platforming aspects were fun, but I died so much on them. lol
I put other for: POW(Prisoner of War) I used to have that game and I rocked at it. :D
Playing TMNT: Turtles in Time is awesome. You can literally play it for hours on end.
Although one of my favorites is Mega Man Power Battle/Power Fighters.
Streets of Rage 2.
Rampage: World Tour and Rampage 2: Universal Tour.
Kind of a platform/beat-em-up, though. And the people you beat up are buildings and the military. Everyone else just flees in panic.
I like Mortal combat...
I dont know if you are familiar with this, but I like Rival Turf. I also love Ninja Gaiden, Double Dragon, and Mortal Kombat.
Seemed like most of the beat em ups I liked aren't listed, so here's my favorites:
Alien vs Predator (Arcade, SNES version was a different, inferior game.)
Captain Commando (Arcade, SNES port was poorly done.)
Knights of the Round (prefer arcade, but I remember the SNES port being pretty good.)
X-Men (Arcade, pretty shallow and basic even for a beat em up, but having 6 players at once is awesome.)
