Since plants give us oxygen to breathe,
why aren't we dead yet?
In the Winter, all plants pretty much die from the cold...

Yes, because all the plants die ALL OVER THE WORLD in the winter.  :robotindifferent:

Because there are other plants around the world that are still alive; it isn't winter everywhere, you know.

Then there is the matter of conifers, which you clearly overlooked. Conifers live quite easily this time of year; and guess what, there are lots of them in the northern hemisphere.

Finally, the OZONE layer helps trap excess oxygen, which we use while there is "depletion", so to speak.
