My friends and I really like 4 player co-op games. We just finished Tales of Vesperia and had a lot of fun with it. After we all picked our own character and sunk into our jobs in the party it got really good. Probably one of my favorite games. We're planning on playing through the other co-op Tales games and that should keep us busy for a while but we'll need something else after.
We've beaten Zelda Four Sword Adventure, Castle Crashers, and L4D 1 and 2. Try to stay away from FPS games if you can but if you feel it's a really good game then that's fine.
Also none of that 2 player co-op offline but full 4 players online BS.
Can be on Wii, PS3, 360, gamecube, or Xbox.

Aegis Wings is free on the X-box Marketplace, and it is fun. Just short.
You said to stay away from First Person shooters, but Borderlands is a full co-op campaign.

This. It's a lot of work to get four GBAs to play with four people, but darn is it worth it.

I should have mentioned that. It was the first co-op game we beat all the way through. It was fantastic.

Also, you spelled it right. Don't worry. But you misspelled 'probably'. And I don' think Prolly is a word ;)
Kirby Air Ride's City Trial can be co-op if you're trying to get all of the achievements on the check list.

Yeah we're gunna play Symphonia but the co-op is kinda bad. The camera follows player 1 around rather than zooming out like in Vesperia or ToS 2 so everyone else ends up off screen.
Marvel Ultimate Alliance (both) on 360/PS3. They're great 4 player romps.
