How many levels are there?
From videos I've seen, there seems to be 3 missions per level and 120 stars total, making there be 40 levels without including any bonus stars in the hub.
You've got it wrong. Well, I'm not exactly sure how many levels there are, but there are levels with six stars sometimes.

1 Bonus Star per Level
Maybe 1 Luigi star every once in a while

ok, heres the full scoop on stars in levels:
main levels: 6 stars: 3 main, 1 secret, 1 prankster, 1 purple comet (after you beat the game once)
side levels: 1 star: (except for one, which had a secret green star out of 3 used for the trial galaxies)
the place you start at: 2 stars: the first is the first grand star, the second is a special red star from getting 100 purple coins.
Enemy bases: 1 star (grand stars count as 1)

There are 121 Levels Total. That's because the secret stars count as a level. In 64/Sunshine they didn't.
