There's a certain turn I HATE. It curves up sharply, but it looks like it goes straight cause it's level with the other side. I always fall off there.

Use brake/lay off the gas.
Doing that helpped me get 2 stars on Special Cup (150cc)!

Is it after those two massive holes/halfpipes?

JrDude is right, but I always get rammed off the edge when I do it. :-\

Rainbow Road (and the game in general) is best with the Cube/Classic controllers. If you're THAT insistant on the "golden wheel" (which I couldn't care less about) then use it.
It's not THAT hard...once you know the layout well enough you can find some cheap tricks in certain areas...
