I think it's not just because a bomb may "fall out of the sky" to kill a veteran, but the overall chance and luck involved with items in the first place.

A bomb out of the sky is bad luck and can kill any player unsuspectedly (is that even a word?).  Likewise, an assist trophy or a Pokeball can contain so many different things that a person could get lucky and get something that kills their opponent or otherwise horribly damages them, while that same person could get a useless one.  The luck involved in these items shifts the game from a game of skill to a game of skill with luck involved, which doesn't bode well with serious gamers.

It's not just those items.  Say, a crate or some other item-holding-thing drops in front of player A.  Randomly, of course, you can't control when and where items will drop.  Player A now has a much greater chance of getting the items indside said box before any other players.  Just randomly, by chance, Player A has been given an advantage over the others.

Also, what's inside crates?  Two players could have two crates and each one has something different inside it.  The better item is granted to a player based on luck and luck alone.

Pretty much, items add a lot to the chance factor of winning and take away from the skill, because if there are two masters battling in a tournament, the one who has luck with items that match is probably going to win.
