Remember that Super Smash Bros. is non canonical to the Zelda franchise! Shiek is a boy IMO because in OoT everyone says he and part of the story was *Zelda disguised herself as a young Shiekah boy...*

Oh, give it up. They based it on a model that was going to be used in TP but was removed from the story (hence during development.)

They gave her gazumbas, they intended her to be a chick.

Sheik was disguised to look like a male in OoT, but that does not make her one.  She is Zelda and Zelda is a female.  You can even tell from her voice in OoT that she sounds like a girl.  Though in the OoT manga series they said that Zelda transformed herself into a male using magic, but it never says that in the game.  I'm pretty sure that this is their way of clarifying things for us.
