Sheikah are probably my most favorite. But I also love the Zoras, Rito, and Twili.

It's really more of an internal difference than external:  Sheikah have heightened ninja-like agility, are more naturally attuned to shadow powers, and they can't hear the voices of the gods as well as Hylians can.  The Gerudo have a somewhat similar situation:  they can't hear the gods as well as Hylians, they have heightened agility, and somehow their entire race is internally synced so that they are physically incapable of giving birth to a male, save for one every one-hundred years; but other than that, they are just like Hylians.
