In particular:
All battle themes, especially the Battle on the Big Bridge and Those Who Fight.
Red Wings, Theme of Love, Rydia, Palom and Porom, Cid's themes of FF4.
Tifa, Aeris, Cid, Cait Sith, and Red XIII's themes from FF7.
Julia's Piano Solo, Slideshow Part 2, Eyes on me...

Fuck it. It's too many to list. Anything by Nobuo is amazing.
What I like most is how the series re-uses some songs.
The prelude, prologue, chocobo theme, and victory fanfare.

What? All the good Nintendo music? It had an extreme lack of Mario RPG's and Golden Sun to begin with. The Zero Two remix for starters was hardly that good. Though others like this;
