Dihydrogen refers to 2 hydrogen atoms. Monoxide refers to 1 oxygen atom.

Scientists refer to "water" as "water". It's so common that we don't use the IUPAC naming system for it. Pretty much the only other chemical that has that honor is ammonia.

but if you're pressured into signing something like that, you're not going to think "Hmm, what's Dihydrogen monoxide?"  You won't have heard of it before, because it's uncommonly used.

Yes, there are common names for many types of molecules. But if you wrote a scientific paper or something of the sort, those two would typically be the only ones that you'd call by their common names; you'd call water "water", and you'd call ammonia "ammonia".

You wouldn't call sodium chloride "table salt", and you wouldn't call nitrous oxide "laughing gas".
